Spiced Coconut Basil Chicken with Rice

A delicious combination of chicken, coconut, and basil served over rice.

  • 1 can coconut milk
  • 2 cups cooked rice
  • 1 cup fresh basil leaves
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon red chili flakes

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and ginger, sautéing until fragrant.
  3. Add chicken thighs and cook until brown on both sides.
  4. Pour in coconut milk and soy sauce, stirring to combine.
  5. Sprinkle in red chili flakes and add basil leaves.
  6. Cover and simmer until chicken is fully cooked.
  7. Serve over cooked rice.
