Spinach and Artichoke Penne Pasta Salad

  • 2 cups fresh spinach, chopped
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1 cup Italian dressing
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the penne pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, spinach, artichokes, cherry tomatoes, and red onion.
  3. Pour the Italian dressing over the pasta salad and toss to coat.
