Street Corn Chicken Rice Bowl

A quick and easy recipe for busy nights featuring tender chicken, sweet street corn, and fluffy rice.

  • 1 pound chicken breast, diced
  • 1 cup street corn, canned or frozen
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup cilantro, chopped

Instructions

  1. In a skillet, heat olive oil over medium heat. Add diced chicken and cook until no longer pink.
  2. Stir in chili powder, garlic powder, salt, and pepper. Cook for an additional 2 minutes.
  3. Add the street corn and cilantro to the skillet. Mix well and cook for another 5 minutes.
  4. Serve over a bed of cooked rice.
