Tender Braised Short Ribs with Garlic Mashed Potatoes

  • 3 lbs beef short ribs
  • 1 tablespoon vegetable oil
  • 2 cups beef broth
  • 1 cup red wine
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 lbs potatoes, peeled and cut into chunks
  • 1 cup heavy cream
  • 4 tablespoons butter
  • 4 cloves garlic, roasted
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large Dutch oven, heat the vegetable oil over medium-high heat. Season the short ribs with salt and pepper and sear them on all sides until browned. Remove from the pot.
  3. Add the onion, carrots, and celery to the pot and sauté until softened, about 5 minutes. Stir in the garlic and tomato paste, cooking for an additional minute.
  4. Deglaze the pot with red wine, scraping up any browned bits. Add the beef broth, thyme, and the short ribs back into the pot.
  5. Cover and transfer to the oven. Cook for 2.5 to 3 hours, until the meat is tender and falls off the bone.
  6. Meanwhile, boil the potatoes in salted water until fork-tender. Drain and return to the pot.
  7. Add the heavy cream, butter, roasted garlic, salt, and pepper to the potatoes. Mash until creamy and smooth.
  8. Serve the short ribs with the garlic mashed potatoes on the side.

  • Let the short ribs rest for a few minutes before serving for better texture.
