- 3 lbs beef short ribs
- 1 tablespoon vegetable oil
- 2 cups beef broth
- 1 cup red wine
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 lbs potatoes, peeled and cut into chunks
- 1 cup heavy cream
- 4 tablespoons butter
- 4 cloves garlic, roasted
- Salt to taste
- Pepper to taste
- Preheat the oven to 350°F (175°C).
- In a large Dutch oven, heat the vegetable oil over medium-high heat. Season the short ribs with salt and pepper and sear them on all sides until browned. Remove from the pot.
- Add the onion, carrots, and celery to the pot and sauté until softened, about 5 minutes. Stir in the garlic and tomato paste, cooking for an additional minute.
- Deglaze the pot with red wine, scraping up any browned bits. Add the beef broth, thyme, and the short ribs back into the pot.
- Cover and transfer to the oven. Cook for 2.5 to 3 hours, until the meat is tender and falls off the bone.
- Meanwhile, boil the potatoes in salted water until fork-tender. Drain and return to the pot.
- Add the heavy cream, butter, roasted garlic, salt, and pepper to the potatoes. Mash until creamy and smooth.
- Serve the short ribs with the garlic mashed potatoes on the side.
