Thai Coconut Red Lentil Soup

Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onions, garlic, and ginger until fragrant.
  2. Add red curry paste and sauté for another minute.
  3. Stir in the red lentils and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until lentils are soft, about 20 minutes.
  5. Stir in coconut milk, soy sauce, and lime juice. Cook for another 5 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with cilantro before serving.

  • For a creamier texture, blend the soup before serving.
