- 1 cup red lentils
- 1 can coconut milk
- 4 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper to taste
- In a large pot, sauté onions, garlic, and ginger until fragrant.
- Add red curry paste and sauté for another minute.
- Stir in the red lentils and vegetable broth. Bring to a boil.
- Reduce heat and simmer until lentils are soft, about 20 minutes.
- Stir in coconut milk, soy sauce, and lime juice. Cook for another 5 minutes.
- Season with salt and pepper to taste.
- Garnish with cilantro before serving.
