White Lasagna Soup

A creamy and comforting soup inspired by traditional lasagna, featuring turkey bacon and a medley of flavors.

  • 1 tablespoon olive oil
  • 4 ounces turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy, then remove and chop.
  2. Add onion and garlic to the pot and sauté until softened.
  3. Pour in chicken broth and diced tomatoes, then stir in Italian seasoning, salt, and pepper.
  4. Bring to a boil, then add lasagna noodles. Cook until tender.
  5. Stir in spinach and cook until wilted.
  6. Add ricotta and mozzarella, stirring until melted and combined.
  7. Serve hot, garnished with chopped turkey bacon and Parmesan cheese.

Notes

  • For extra creaminess, add a splash of heavy cream before serving.
  • Can be topped with fresh basil for added flavor.
