- 1 tablespoon olive oil
- 4 ounces turkey bacon
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces lasagna noodles, broken into pieces
- 2 cups spinach
- 1 cup ricotta cheese
- 1 1/2 cups mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy, then remove and chop.
- Add onion and garlic to the pot and sauté until softened.
- Pour in chicken broth and diced tomatoes, then stir in Italian seasoning, salt, and pepper.
- Bring to a boil, then add lasagna noodles. Cook until tender.
- Stir in spinach and cook until wilted.
- Add ricotta and mozzarella, stirring until melted and combined.
- Serve hot, garnished with chopped turkey bacon and Parmesan cheese.
