Wild Mushroom, Caramelized Onion and Kale Soup

A warm and hearty soup perfect for chilly evenings.

Ingredients

Scale
  • 2 cups wild mushrooms
  • 1 large onion, caramelized
  • 2 cups kale, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onions and cook until caramelized.
  3. Stir in the garlic and thyme, cooking for another minute.
  4. Add the wild mushrooms and sauté until they are soft.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the chopped kale and simmer for 10-15 minutes.
  7. Season with salt and pepper to taste.

Notes

  • For added creaminess, blend half of the soup and return to pot.
  • Serve with crusty bread for a complete meal.
