- 2 cups wild mushrooms
- 1 large onion, caramelized
- 2 cups kale, chopped
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add the onions and cook until caramelized.
- Stir in the garlic and thyme, cooking for another minute.
- Add the wild mushrooms and sauté until they are soft.
- Pour in the vegetable broth and bring to a boil.
- Add the chopped kale and simmer for 10-15 minutes.
- Season with salt and pepper to taste.
