Witch’s Cauldron Beef Stew

A delicious and hearty beef stew that warms the soul, perfect for any occasion.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 large carrots, sliced
  • 2 large potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add beef and brown on all sides.
  2. Remove beef and set aside. In the same pot, add onion and garlic, sauté until softened.
  3. Stir in tomato paste, then return the beef to the pot.
  4. Add beef broth, carrots, potatoes, thyme, salt, and pepper, bring to a boil.
  5. Reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender.
  6. Adjust seasoning to taste before serving.

Notes

  • For a thicker stew, mix a tablespoon of cornstarch with cold water and stir in to thicken during the last few minutes of cooking.
