- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 large carrots, sliced
- 2 large potatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- In a large pot, heat olive oil over medium heat. Add beef and brown on all sides.
- Remove beef and set aside. In the same pot, add onion and garlic, sauté until softened.
- Stir in tomato paste, then return the beef to the pot.
- Add beef broth, carrots, potatoes, thyme, salt, and pepper, bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender.
- Adjust seasoning to taste before serving.
Notes
- For a thicker stew, mix a tablespoon of cornstarch with cold water and stir in to thicken during the last few minutes of cooking.
